Shopping List:
*Keep this as frugal as possible by shopping at Aldi and using Ibotta for free cash back!
6 large chicken breasts (or 12 small) – see note below
1 1/2 cup salsa
1-2 large bell pepper(s) (or about 3-4 small peppers)
1 cup BBQ sauce
1 cup Italian dressing
1/2 cup honey dijon mustard
1/4 cup honey
1 cup Italian breadcrumbs
1 cup Panko breadcrumbs
1/2 cup grated Parmesan cheese
1 egg
Spices:
1 tsp crushed red pepper flakes (for honey mustard chicken)
All the rest of the spices are for the chicken fajita mix:
1/2 tsp each: paprika, oregano, ground cumin, black pepper, salt, chili powder, onion powder, garlic powder
Note about chicken: I use 1 large chicken breast split for the 2 of us and it’s plenty. If you have smaller chicken breasts, you may want to use 1 per serving. I like to keep our meals frugal by using less meat, and fill in with sides.
