Are you trying to eat healthy and stay on a budget? Staying on budget and eating healthy don’t usually go hand in hand, but we can make this work!
This frugal healthy meal is also super quick and easy to put together. Love that!
Frugal Healthy Meal: Chicken Burrito Bowls
Makes 5 burrito bowls.
Ingredients:
Shop at Aldi if you have one, and remember to use Ibotta (free app) to get cash back on your everyday groceries!
1 lb chicken breasts (I love shopping with Zaycon to get my meat in bulk and at really low prices) (Update: Zaycon has suspended business operations since publishing this post. I will keep my posts updated with any changes.)
Jar of salsa (I love Aldi‘s salsa, and it’s only $1.49!)
2 packages of brown rice (the microwave kind is perfect)
1 jar of black beans (rinsed and drained)
1 jar of whole kernel corn (drained)
Shredded lettuce
Tomatoes or pico de gallo
Shredded cheese – about 1 cup
*5 containers and lids
Total = About $9 (shopping with Zaycon and Aldi) for 4 lunches = $2.25/lunch
Much better than eating fast food, which is more expensive and much less nutritional.
Directions:
The chicken will cook in the crock pot all day, then you will prepare your burrito bowls. The chicken is the same salsa chicken I used in my freezer cooking recipes.
Cook a little extra chicken to serve as chicken tacos that night so you knock out dinner and lunches!
- Place chicken breasts and enough salsa to cover the chicken in a small crock pot. Cook on low for 6-8 hours. Shred.
- Divide your shredded lettuce into 5 containers. I put mine in sandwich bags separate from the rice/chicken mix.
- Heat the brown rice and divide into 5 containers.
- Divide your shredded chicken into 5 portions and place on top of the rice.
- Rinse and drain the black beans, drain the corn, and add the tomatoes together. Divide this mixture into the containers.
- Sprinkle with shredded cheese.
- Place one bag of lettuce with each container in the fridge.
- When ready to serve, heat the rice/chicken mixture for about 1 1/2 minutes and place on top of the lettuce.
These burrito bowls are perfect for lunches. Plan and prep your lunches ahead of time with these delicious chicken burrito bowls!
I love how the chicken cooks in the crock pot, and you don’t have to cook anything else. So easy!
