My favorite nights are the ones where I get home, cook a quick meal for my husband and I, and then have plenty of time to work on a project or play with our dogs. And then, have a few quiet minutes before bedtime to relax and unwind.
Sounds pretty sweet, right?
It is!
When we first got married, we were still renovating our home and trying to get settled. We moved out to the country, with only two restaurants nearby. And… a very small budget to work with. I had to teach myself how to cook simple, frugal meals. Which was great! Until I was spending over an hour in the kitchen every night.
As a newlywed, I wanted to spend more time with my husband and more time doing fun things, instead of spending hours cooking in the kitchen every night. So, the next thing I taught myself was how to cook in batches, which I later realized is actually a thing and it’s called freezer cooking.
I learned how to make meals in bulk, at once, and freeze extra meals for later. That way, I did all the work once (and the dishes). And when dinner time came, I could just heat or finish the meal. And enjoy the free time I created by working ahead.
It’s been a game changer to say the least.
