This is an awesome plan to help you stock your freezer full of 21 meals for 2 people all in about an hour’s time.
If you’ve been around the blog before, you have probably heard me talking about freezer cooking. I’m a huge fan!
Freezer cooking can be done in a lot of different ways. The way I do my freezer cooking is to make a big batch of a few different meals, and freeze them in perfect portions for us.
There are just 2 of us, so this freezer cooking plan will show you how a plan for freezer cooking for 2. You can use this plan for any family size, but you will adjust how you portion your meals.
If your life is crazy busy, and you barely have time to sit down and eat, much less cook dinner, freezer cooking may be perfect for you.
Or, if you are tired of getting dinner at the drive thru every night because you are too tired to cook after a long day at work, freezer cooking will help you.
You can make these meals on the weekend, or whenever you have a spare hour, and dinner is ready for 3 whole weeks! So, 1 hour of cooking = 21 meals ready to go!

Freezer Cooking for 2: The Meals
These are the different meals I made in this freezer cooking session. They are all simple and picky eater approved!
- 4 Chili meals
- 7 Spaghetti meals
- 2 Taco meals
- 3 Honey Mustard Chicken Slider meals (adapted from Pioneer Woman’s Ranch Style Chicken Recipe)
- 2 BBQ Chicken meals
- 3 Italian Chicken meals
Shopping List:
Here is the shopping list of all of the ingredients needed for this freezer cooking session.

- 2.5 lbs of ground beef
- 8 large chicken breasts
- 3 28 oz cans tomato sauce
- 2 14.5 oz cans diced tomatoes with basil, garlic, and oregano
- 30 oz can pinto beans
- 15.5 oz light red kidney beans
- 1 can of Rotel original
- 8 oz can tomato paste
- Package of taco seasoning
- Bottle of BBQ sauce
- Bottle of italian dressing
- 1 cup dijon mustard
- 1/2 cup honey
- Dash hot sauce
- Dash Worcestershire sauce
- Spices: cumin, crushed red pepper flakes, chili powder, garlic salt, cayenne pepper

And here are the directions to follow to make all of these great freezer meals so you can stock your freezer, too!

- Brown 1.5 lbs ground beef
- Start making spaghetti sauce:
- Add tomato sauce, diced tomatoes, dash hot sauce, dash Worcestershire sauce, 1/2 tbsp chili powder, 2 tsp garlic salt (Optional: Add basil leaves and dried oregano. I was out of these spices, so I used the seasoned diced tomatoes)
- Start making chili:
- Add pinto beans, kidney beans, Rotel, tomato paste, 1/2 tbsp cumin, 1/2 tbsp chili powder, sprinkle cayenne pepper
- Drain meat on a paper towel to remove grease.
- Divide ground beef between spaghetti sauce and chili. Stir and let simmer.
- Add remaining 1 lb. of ground beef to skillet and brown.
- Mix taco seasoning packet with 2/3 cup of water.
- While meat is browning, you can label your bags for the chicken freezer meals:
- 2 bags – BBQ Chicken
- 3 bags – Italian Chicken
- 3 bags – Honey Mustard Chicken
- Drain ground beef on paper towel to remove grease. Add back to skillet with taco seasoning. Let simmer.
- While all the beef meals are simmering on the stove, you can make your chicken freezer meals.
- To make the BBQ Chicken:
- Slice 2 large chicken breasts into 8 tenders.
- Divide between 2 labeled bags.
- Add BBQ sauce to bag and rub to coat chicken and seal bag.
- To make the Italian Chicken:
- Slice 3 large chicken breasts into 12 tenders.
- Divide between 3 labeled bags.
- Add Italian dressing to bags and seal.
- To make Honey Mustard Chicken:
- In a small bowl, mix honey and dijon mustard with 1 tsp crushed red pepper flakes and whisk.
- Using 3 large chicken breasts, cut the chicken horizontally to make 2 thinner breasts. Then, cut those in half creating 4 small, thin chicken pieces from each breast.
- Using a basting brush, coat each chicken piece with the honey mustard mixture.
- Place 4 pieces in each labeled bag, and coat the other side with the honey mustard. Seal bags.

Here is how to quickly finish the meals when you are ready to serve them. Most of the work is already done!

Spaghetti:
- Thaw sauce in fridge overnight.
- Heat sauce in small pan.
- Boil noodles.
- Serve with side salad or french bread.
Chili:
- Thaw chili in fridge overnight.
- Heat in small pot or in microwave.
- Serve in a bowl with shredded cheese and Frito’s or on top of hot dogs.
Taco Meat:
- Thaw meat in fridge overnight.
- Heat in microwave until warm.
- Serve on tortillas with favorite toppings, on nachos, or make a taco salad.
*This is the easiest meal to heat up. If we ever have to eat dinner alone, I will thaw taco meat so we don’t have to do dishes for just one person! It’s super easy to heat up and no mess!

BBQ Chicken:
- Thaw chicken in fridge overnight.
- Heat oven to 350 degrees.
- Place chicken with BBQ sauce in baking dish and bake for about 30-35 minutes.
- Serve with vegetables, potatoes, or a salad.
Italian Chicken:
- Thaw chicken in fridge overnight.
- Grill in skillet or on grill until golden brown.
- Serve with vegetables, potatoes, or on a salad.
Honey Mustard Chicken:
- Thaw chicken in fridge overnight.
- Grill in skillet or on grill under golden brown.
- Serve as slider sandwiches on small slider buns.
- Toppings: bacon, melted cheese, BBQ sauce, pickles, coleslaw…

Make dinnertime easier!
Freezer cooking really makes my life so much easier. I can get dinner on the table every night with little effort. And, it saves us money since we have dinner ready at home, we don’t have to out to eat.
And we don’t waste much food at all!
