Are you looking for a new freezer cooking plan? In this post, I’m sharing the Mexican freezer meals I just made to stock our freezer.
Freezer cooking is a great way to get ahead on dinnertime, so you can save time and money. When you have a busy week ahead, freezer meals are the perfect way to feed your family a great meal with little time.
I have been making freezer meals for about 5 years, and love stocking my freezer with ready to go meals that can be heated up quickly.
These Mexican freezer meals were easy and quick to make, and I’m so glad to have them stocked away in our freezer.
Mexican Freezer Meals to Make Ahead
You can make freezer meals just a few at a time, focus on one kind of meat or style of cooking, or spend a whole afternoon making meals for the freezer.
For this Mexican freezer cooking plan, I used beef and chicken, but kept the meals simple and used the same ingredients in multiple meals to keep it quick and easy.
Note: I made these Mexican freezer meals for the 2 of us. You can adjust the portions to fit your family size, or double (or triple) the freezer plan for your family.
Mexican Freezer Meals:
*For 2 person servings.
Taco Meat – 2 containers
Shredded Chicken (for quesadillas, nachos, or burrito bowls) – 3 containers
Chicken Tacos – 2 bags
Salsa Chicken – 2 bags
Taco Bake – 1

Ingredients:
*Remember to adjust this for your family size. This plan is for the 2 of us. You can double or triple this plan to fit your family.
2 lbs ground beef
6 large chicken breasts
3 taco seasoning packets
4 oz Mexican style shredded cheese
2 large flour tortillas
1 1/2 jar of salsa (save the rest to serve with tortilla chips!)
Directions:
1. Boil water and 2 chicken breasts.
Start by boiling water and 2 of the chicken breasts. You can start on the other meals while the chicken boils.
2. Brown the ground beef.
Add the ground beef to a large skillet and brown. Drain the grease when browned.
3. Make Salsa Chicken.
Label 2 freezer bags Salsa Chicken. Add 1 large chicken breast to each bag and 1/2 a jar of salsa. Remove the air and seal the bags.
4. Make Chicken Tacos.
Mix 1 taco seasoning packet with 2/3 cup of water.
Label 2 freezer bags Chicken Tacos. Add 1 large chicken breast to each bag and split the taco seasoning between the 2 bags.
Remove the air and seal the bags.
5. Add taco seasoning to ground beef.
Mix 2 taco seasoning packets with 1 1/3 cup of water.
After the ground beef is browned and the grease is drained, add the taco seasoning. Let this come to a boil and then reduce the heat to simmer.
6. Shred chicken in mixer.
When the chicken is done, add it to a mixer and shred. (Or use a hand mixer).
Divide the chicken between 3 freezer containers.
7. Make taco bake.
Make the taco bake by placing 2 tortillas in the bottom of a foil or casserole pan.
Add taco meat, salsa, and shredded cheese. Cover with foil and label.
8. Place taco meat in containers.
Place the leftover taco meat in freezer containers.
That’s it! Make sure everything is sealed, labeled, and place in the freezer.

To finish the meals:
Taco Meat: Thaw in the fridge overnight. Heat in the microwave until warm. Serve on tortillas or tortilla chips with your favorite toppings.
Chicken Tacos: Thaw in the fridge overnight. Dump into a small crockpot on low for 6-8 hours. Shred with forks and serve on tortillas or tortilla chips with your favorite toppings.
Salsa Chicken: Thaw in the fridge overnight. Dump into a small crockpot on low for 6-8 hours. Shred with forks and mix. Serve on tortillas with your favorite toppings.
Shredded Chicken: Thaw in the fridge overnight. Use for chicken and cheese quesadillas, easy nachos, or burrito bowls.
Taco Bake: Thaw in the fridge overnight. Bake at 350 degrees for 30-40 minutes, or until warm and cheese is melted.
This was a quick and easy freezer cooking plan, and helped me get several meals in the freezer quickly. By using just a few ingredients, I was able to get these meals put together quickly and easily.
