Looking for some quick breakfast ideas for busy mornings? In this post, I’m sharing some great frugal breakfast ideas that can be ready in no time!
Mornings can be hectic, and you may find yourself with little to no time to have breakfast. But, with some super quick breakfast ideas up your sleeve, you can enjoy a great breakfast fast.
I asked this question on Instagram and got so many great responses! So, I’m sharing all those great ideas and my favorites here. Enjoy!
18 Quick Breakfast Ideas
These breakfast ideas are perfect for busy mornings when you don’t have much time for breakfast, but you need something good and filling!
Add some of these ideas to your favorite meal list, and start stocking up for less hectic mornings!
Easy and Fast Breakfast Ideas:
1. Breakfast Burritos
These are a great meal to have in the freezer. You can heat them up quickly and take them with you!
Here’s the recipe I use:
Ingredients:
- 1 lb of sausage
- 12 small flour tortillas
- 6 eggs
- Shredded cheddar cheese (or whatever you have on hand)
- Salsa (optional)
Directions:
- Brown sausage in crumbles.
- Scramble eggs
- Assemble breakfast burritos by laying out 12 small tortillas, dividing your sausage crumbles onto the tortillas, dividing your scrambled eggs on top, sprinkling shredded cheese, and adding dollops of salsa, if you wish.
- Place in freezer bag.
To heat:
- Thaw in the fridge overnight, and heat in microwave for 1 minute – 1.5 minutes.
- From frozen, heat in microwave for 2 – 3 minutes.
2. Breakfast Sandwiches
Another great, quick meal to have stocked in the freezer. These are filling and easy to heat up!
Here’s my recipe:
Ingredients – Makes 6 Sandwiches

- 6 English muffins (or other favorite bread or biscuit)
- 6 Sausage Patties (You can substitute for bacon or ham)
- 6 Cheese Slices
- 6 Eggs
- Salt and Pepper
- Freezer Sandwich Bags
Directions:
- Cook sausage patties until browned. Drain on paper towel.
- Whisk eggs in bowl (I like to add a little milk) like you were making scrambled eggs.
- Pour a thin layer of whisked eggs in small skillet.
- Flip the eggs, trying to keep them in one piece. (These will be much easier to keep together on the muffin than scrambled eggs.) Repeat until you have all eggs cooked.
- Slice muffins in half.
- Begin making sandwiches by placing egg on bottom, add a little salt and pepper, then a sausage patty, and a slice of cheese.
- Place each sandwich in plastic bag, and store in freezer or refrigerator.
I thaw these in the refrigerator overnight and heat in the microwave for 1 minute – 1.5 minutes, until the cheese melts. Yum!
*If you don’t have much time, or many eggs on hand, just do the sausage and cheese!
3. Muffins
You can make a big batch of muffins and freeze them in freezer bags. Grab a muffin and some fruit for a quick breakfast!
Use your favorite muffin recipe or a box mix!
I love these reusable silicone baking cups, so I don’t have to keep buying baking cups. And I think muffins freeze better in them!
4. Pancakes
On slower weekend mornings, I love to make a big batch of pancakes and put the leftovers in a gallon size freezer bag in the fridge.
These keep for a few days and can easily be heated in the microwave for a quick breakfast.
5. Waffles
Waffles can also be made in bulk on the weekends, and kept in the fridge or freezer to heat up on busy mornings.
6. Pre-portioned fruit
When you buy fruit, go ahead and split it up into individual portions. This way, you can easily grab some fruit on your way out the door.
You can use ziploc bags or food storage containers. Place the fruit packages in one easy to see spot in the fridge, so your whole family can easily see and grab fruit.
7. Banana Bread
I love to make several loaves of banana bread and stick in the freezer for quick breakfasts.
As bananas get to ripe to eat, just peel them and stick them in a freezer bag in the freezer. When you have enough, make a big batch of banana bread.
I love to use the small loaf foil pans from Dollar Tree to make this easy and easy to clean up.
Here are two recipes I have tried and love:
One Bowl Chocolate Chip Banana Bread
I will make several batches of the recipe, fill my foil loaf pans, place them on a baking sheet, and bake them all at once.
After they cool, you can wrap them in aluminium foil or place them in a freezer bag, and store them in the freezer.
When you need a quick breakfast, thaw a banana bread loaf on the counter. I like to make small slices and enjoy mine with some fruit, sausage links, or bacon.
8. Pre cooked sausage patties
When you make breakfast on the weekend, cook up some extra sausage patties and stick them in the freezer.
On busy mornings, you can pull some out and heat up for quick breakfast. Just add some fruit for a great breakfast!
9. Homemade Granola and Granola Bars
Search for a homemade granola or granola bar recipe that appeals to you, and make a batch to have on hand for a quick breakfast.
10. Energy Balls
There are tons of recipes for energy balls – just search for a recipe that suits you and make these for easy bites of energy to start your day.
11. Breakfast Casserole
This was a Instagram follower suggestion and such a good idea!
Make a couple of breakfast casseroles on the weekend. Enjoy one with your family and stash the other one in the fridge or freezer to enjoy throughout the week.
12. Oatmeal
A reader suggestion: oatmeal! Look for a great stock up price on oatmeal at the grocery store for a quick breakfast idea. You can add in toppings or fruit to mix it up.
13. Overnight Oats
Two readers suggested this one: overnight oats! This would be a super easy breakfast that is very frugal.
14. Instant Pot Egg Bites
This was another reader suggestion. I wasn’t sure what this was, so I looked it up and found this yummy recipe!
15. Yogurt with fruit or granola
A reader wrote in with this simple breakfast idea. This would be a very simple and quick breakfast to throw together.
16. Smoothies
Another reader suggestion! Smoothies would be a quick breakfast idea, especially if you have smoothie packs ready to go in the freezer with all the ingredients ready to blend up.
17. Cheesy Scrambled Eggs
A reader suggested this easy breakfast idea. You can quickly scramble some eggs, add shredded cheese for more flavor, and serve with some fruit.
18. Frittata
A reader suggested a breakfast frittata. I found this yummy looking recipe for a breakfast frittata. You could try making this on the weekend, and enjoying leftovers throughout the week.
